When you look at the top of the VLC player you should see "subtitle" (between video & tools options for their drop down menus ) for an option that will give you a drop down menu.

In that you should have "add subtitle tract" option (any file from the sub scene websites would work, although they are a separate download)
and you should have an option for a subtitle file already there that came with this video. If not you, you need to go grab subtitles for this file, other wise continue below.
You should see below the above option an actual subtitle file, it won't trigger a window to select file and then click open.
You may need to click on this file option to enable it and/or disable it then re-enable it. to get it to work. I know that's the old lame "turn it off and back on again" advice/trick but sometimes it what fixes it for me.

If not hit the subtitle scene site(s), make sure you choose you language and match the file release name(many will work even if not exactly for your release name) and then choose which type of subtitles you want translations, and/or hearing impaired (they have their own releases with corrections and improvements). So read the notes, they even more them so they are easier to read and/or on the black bar under neath the video so the subtitles aren't blocking what is on screen. There is lot of impressive work the sub title scene does just to make the word a better place.

IF you're not seeing the subtitle in the VLC subtitle drop down menu that is separate issue. Which may be easily fixed by going and downloading the .srt subtitle file and then rewatching video and clicking the add subtitle--> choose your new subtitle file, click open and you should be good to go
